果糖基氨基酸氧化酶(FAOX)屬于氧化還原酶,是糖化血紅蛋白(HbA1c)檢測試劑盒(酶法)的主要原料。
原理:Fructosyl-L-amino acid+H2O+O2→ L-Amino acid+Glucosone+H2O2
含有果糖基的氨基酸或肽,在果糖基氨基酸氧化酶的作用下,被特異性地氧化,生成相應的氨基酸、葡萄糖醛酮和過氧化氫。
